Ingredients
1ripe banana
1cup oats(gluten free if needed!)
60dark chocolate chips(4 per cookie)
Instructions
Preheat oven to 350°. Line a baking sheet with parchment paper or foil sprayed with non-stick cooking spray.
In a medium bowl, smash the ripe banana with a fork.
Add the oats and stir until combined.
Using a spoon or small cookie scoop, scoop the oat mixture into small mounds on the cookie sheet.
Add 4 chocolate chips to each cookie. (This ensures chocolate in each bite, but not too much!) Gently press each chip into the cookie.
Bake cookies for 10-12 minutes in a 350° oven. The edges of the cookies will just begin to brown. Allow the cookies to cool before removing from the baking sheet.
Cool and store in an airtight container for 2-3 days.
